Chef Esteban Diaz grew up in the northern coastal Peruvian town of Chiclayo, where his mother and grandmother taught him the art of cooking traditional Peruvian cuisine from a very young age. His childhood filled with cooking for his family quickly blossomed into the desire to expand his knowledge and turn his culinary aspirations into a career. At the age of 22, Esteban enrolled at Cenfotur college of culinary arts, where he honed his knowledge acquired during adolescence, as well as cuisines from around the world. Esteban became a very well established chef in Chiclayo, until the pandemic in 2020 wreaked havoc on the Peruvian economy, causing the hospitality industry to shut down for exponentially longer than in the U.S.. Esteban took this as a sign to pursue his dream of showing the world what authentic Peruvian gastronomy entails. “When I prepare traditional dishes for my clients, I make them feel as if they were eating in my own home. The best thing about Peruvian gastronomy is its variety and diversity, and my passion and desire is to be able to make the dishes and traditions that my culinary culture offers better known to those that aren’t fortuante enough to have experienced them”
